🥗 Ingredients (4 servings)
2 zucchinis (sliced into half-moons)
2 eggplants (diced)
2 red bell peppers (cut into strips)
2 carrots (thinly sliced)
2 potatoes (cubed)
8–10 garlic cloves (peeled, whole)
1 large onion (sliced into half-moons)
½ cup Savia Olive Oil
1 tsp salt
1 tsp black pepper
1 tsp thyme
1 tsp red pepper flakes
Juice of ½ lemon
👩🍳 Preparation
Wash and chop the vegetables, then place them in a large mixing bowl.
Add salt, spices, lemon juice, and plenty of Savia Olive Oil.
Mix everything thoroughly to coat the vegetables.
Spread on a baking tray lined with parchment paper.
Roast in a preheated oven at 180°C (350°F) for 35–40 minutes.
Remove once golden, and serve warm or at room temperature.
