Artichokes are among the most cherished vegetables of Anatolian cuisine. When paired with olive oil, they become a dish that is both light and nourishing. Here’s a traditional recipe you can prepare with Savia Riviera or Extra Virgin Olive Oil—bringing freshness and elegance to your table.

🥗 Ingredients (4 servings)

  • 6 cleaned artichokes

  • 1 large potato (diced)

  • 1 carrot (sliced into half-moons)

  • 1 cup peas

  • 1 medium onion (chopped)

  • ½ cup Savia Olive Oil

  • Juice of ½ lemon

  • 1 tsp sugar

  • 1 tsp salt

  • 1 ½ cups hot water

👩‍🍳 Preparation

  1. Heat Savia Olive Oil in a large pot.

  2. Sauté the onion until lightly golden.

  3. Add carrots and potatoes, and cook for 2–3 minutes.

  4. Stir in the peas, then arrange the artichokes in the pot.

  5. Add salt, sugar, lemon juice, and hot water.

  6. Cover and cook on low heat for about 30–35 minutes, until tender.

  7. Remove from heat and allow to cool.

✨ Serving Suggestion

Fill the artichokes with the cooked garnish once cooled.
Drizzle with extra Savia Olive Oil.
Garnish with fresh dill or parsley before serving.

💡 Savia Tip

Olive oil–based dishes taste even better when served cold. Prepare the artichokes a day ahead and let them rest in the fridge—the flavor deepens beautifully.
