🥗 Ingredients (4 servings)

  • 2 zucchinis (sliced into half-moons)

  • 2 eggplants (diced)

  • 2 red bell peppers (cut into strips)

  • 2 carrots (thinly sliced)

  • 2 potatoes (cubed)

  • 8–10 garlic cloves (peeled, whole)

  • 1 large onion (sliced into half-moons)

  • ½ cup Savia Olive Oil

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp thyme

  • 1 tsp red pepper flakes

  • Juice of ½ lemon

👩‍🍳 Preparation

  1. Wash and chop the vegetables, then place them in a large mixing bowl.

  2. Add salt, spices, lemon juice, and plenty of Savia Olive Oil.

  3. Mix everything thoroughly to coat the vegetables.

  4. Spread on a baking tray lined with parchment paper.

  5. Roast in a preheated oven at 180°C (350°F) for 35–40 minutes.

  6. Remove once golden, and serve warm or at room temperature.
